If your in the mood for some cobbler, or yummy donut like
bites, this is the perfect raw snack ball recipe to use. This is definitely a
dessert like ball, and is moist in texture. It goes great with raw vanilla ice
cream, or with a cup of hot tea. I love these bites, and I hope you will to.
Here’s the recipe:
Ingredients:
2 cups cashews
¼ cup almonds
1 T lucuma
½ cup maple sugar
dash cinnamon
dash ginger
¼ tsp pink Himalayan salt
1 full cup dried California
peaches
16 dates
drizzle agave
Preparation:
Using a food processor, grind nuts almost to a powder. Add
remaining ingredients, adding the dates for last, and mix until sticky and
dough like. Remove from processor and place in a large mixing bowl. Using a
spoon or cookie scoop, scoop dough into hands and roll into small balls. I
actually cut the dough balls in half and roll them into smaller balls. Do this
for all the dough. Store in an air tight container. You can store in the
cupboard, but best to store in the refrigerator for up to 2 weeks.
