Chocolate-Cherry Jungle Cookie Balls

This next cookie recipe is made with Brazil nuts and raw wild jungle peanuts. Wild jungle peanuts are an heirloom variety of peanuts that are grown in the Amazon jungle. These ancient wild peanuts are rich in peanut flavor, and packed with nutrition. Wild jungle peanuts are considered heart healthy, containing large amounts of oleic acid and an abundance of monounsaturated fats. They contain all eight essential amino acids, making them an excellent source of complete protein. These peanuts are also an excellent source of vitamin E, calcium, iron, and niacin. They are also rich in antioxidants. They are the perfect snack food, and perfect for this cookie recipe.

Jungle peanuts can be challenging to find, and somewhat pricey. However, Whole Foods has been known to carry this peanut, and you can find it online from various sources – including Amazon.com.

Ingredients:
1 1/2 cups raw jungle peanuts
1 1/2 cups raw Brazil nuts
1-2 T raw cacao nibs
1/4 cup raw cacao powder
12 pitted Medjool dates
1 cup dried cherries
1 tsp raw vanilla bean powder
dash ground cinnamon
1 tsp pink Himalayan salt
drizzle agave
few drops SweetLeaf Liquid Stevia (clear or flavored)

Preparation:
In a food processor combine nuts and process until a crumbly powder. Add cacao nibs and cacao powder and mix again. Then add vanilla bean powder, cinnamon and salt. Next add the dates and cherries. Mix until sticky. Add agave and stevia and mix until a dough-like consistency is formed.

Using a spoon and your hands, make equal sized cookie or ball shapes. Store in the refrigerator in an air-tight container. Eat cold or at room temperature. These cookies are delicious and can keep up to two weeks in the fridge.
