PBJ Snack Balls

Are you familiar with organic peanut butter powder? It’s not raw, but it’s a good alternative to use when you just have to have peanut butter. It’s more than 90% less fat than traditional peanut butters, most brands are gluten-free, vegan, cholesterol-free, and have no GMOs, transfats, wheat, corn, soy or dairy. Just add water to make a butter or include the powder in your favorite recipes. It’s that easy! Although I don’t use it all the time, I do enjoy including it in some of my “nuttier” recipes. Try it for yourself and let me know what you think. In the meantime, make some of these yummy snack balls. They go great served with nut milk!




Ingredients:
1 cup almonds
1 cup dried berries and/or raisin fruit
½ cup pecans
1 cup dates (pitted)
¼ tsp pink Himalayan salt
1 tsp organic, non-alcoholic vanilla extract
1 tsp lucuma powder
¼ cup shredded coconut

½ cup to ¾ cup organic dried peanut butter powder

Preparation:
Combine all ingredients except for dried peanut butter into a food processor and mix until sticky and crumbly. Transfer to a large bowl. Using a small scoop or table spoon, measure one scoop of the mixture, and roll dough into a ball. Set aside. Continue this process until all dough is used.

Place dried peanut butter powder onto a plate or shallow bowl. Roll each ball into the powder till well covered. Ready to serve. Store in an air tight container in the refrigerator for up to 2 weeks, or in a cool dry place for a few days.

Optional preparation:
Add cacao nibs or chips with the peanut butter powder to roll balls in. Or, include peanut butter powder with mix and process all ingredients. Form dough into individual snack balls and serve.
